Feta, Pomegranate And Tomato Lettuce Cups - gluten free
INGREDIENTS:
1 x finely sliced red pepper
1 x medium finely diced red onion
1 x head cos lettuce
2 x medium tomatoes cut into cubes
200g feta cheese, diced
1 x pomegranate’s worth of seeds
2 finely chopped sprigs of mint
Handful of finely chopped oregano
Handful of finely chopped parsley
3 tbsp extra virgin olive oil
METHOD
1. Place red pepper, diced onion, pomegranate seeds, tomato, feta and parsley in a bowl.
3. Drizzle over the olive oil and toss the salad carefully.
5. Prepare the lettuce so that you can use the bigger leaves as a cup to hold the salad.
6. Fill your lettuce cups with the mixture and scatter over the mint and oregano.
